Berry Berry Sorbet
The best thing about this frozen dessert is that it’s easy. Use fresh berries if you have them on hand, or sub in a handful of snap-frozen berries from your freezer. Kids love this sweet treat, too.
Makes: 4 serves
Takes: 10 minutes to prep + freezing time

Ingredients:
2 cups water
2 cups caster sugar
4–5 cups mixed berries, hulled if using fresh
2 tablespoons lemon juice
Method: In a small saucepan, combine the water and caster sugar and stir over a low heat until the sugar has dissolved. bring the syrup to a boil, then remove from the heat. allow to cool fully. Place the berries in a food processor and blend to a purée. if you don’t want seeds in your sorbet, strain the purée through a sieve into a medium-sized bowl. add the lemon juice.
Once the syrup is fully cooled, combine it with the fruit purée, and transfer to a sealable container. freeze for 3–4 hours until just set. Place the just-frozen sorbet back in the food processor and blitz again. Return to the sealable container and freeze for a further 3–4 hours before serving.
Variation: Experiment with different fruits, depending on what’s in season. Mango sorbet is one of my faves!
